SQUID WITH ARTICHOKES (4-6 pp.)
large squid 800 gr.
5-6 artichokes "Moretti"
tomato
parsley 1 clove garlic
EVO oil salt, pepper
thoroughly clean the squid and cut into slices not too thin, clean the artichokes well (yes I know. .. this is the part Pallosa ...) then chop the stems and sliced \u200b\u200bartichoke hearts, then put them in a bowl covered with water, lemon juice and a tablespoon of flour to avoid oxidation.
Chop parsley and garlic and put the squid in a saucepan covered with the mixture and a little oil and salt and cook over low heat 10 minutes (water should not occur, check cmq ...) then add 5 tablespoons of tomato paste adding water if necessary, cover for 10 minutes.
Add to this the artichokes and cook for 10-15 minutes (check the kitchen must be very soft), adjust the salt, turn off and put another round of oil. Bon appetit!
